I gave it to them straight, if these meals were too complicated for me, they weren’t going to make it in the book.
We had to go back and forth many times.
They had to forget all their fancy techniques and ingredients and take it back to simple home cooking, whilst still keeping the flavour.
I hosted countless dinner parties practising the recipes, making sure they were crowd pleasers as well as being easy enough for someone like me who was usually useless in the kitchen.
I didn’t get (or want) ANY help from my girlfriend whilst cooking them.
I wanted to make sure they were as easy as possible.
Not all the recipes made it.
But the ones that did, were a huge hit.
I’d have meat-eating friends asking for the recipes so they could make them at home!
That’s when I knew I had something special that I needed to get out into the world.
